India is not known for its larger cities, most travellers choosing to use them as a transit between the beaches of Goa or the resin temptations of the Himalayas. This is perfect for solitary souls who have a tremendous appetite for plates and bowls. The bigger cities are inundated with phenomenal local food places, not to mention collections of dishes from all over the Sub-Continent if you look hard enough.

Our favourite city by far is Mumbai, home of the unspeakable air, purveyor of slow secrets, vengeful and merciless, yet human and kind. The contradictions are a true addiction.

Escaping religious persecution in the 8th-9th century, a group of Parsi's settled in the coastal city of Mumbai (via Gujarat). A melting pot of cultures already from around the sub-continent, they found a home in the busy streets of Bombay, and over time began to leave their own fingerprint on the cities cultural and culinary fabric.
